INGREDIENTS
1 tbsp olive oil
1 pound boneless skinless chicken breasts cubed
1 onion chopped
14-ounce box of chicken broth
2 15.8 ounce cans Great Northern Beans drained and rinsed
1 1/2 tsp garlic powder
1/2 tsp salt
1 tsp ground cumin
1 tsp oregano
8-ounce container sour cream
1 cup whipping cream
shredded Colby Jack Cheese to garnish
INSTRUCTIONS
Heat olive oil in a skillet over medium-high heat.
Add chicken and saute until done. Set aside.
Add more oil if necessary and saute onions until translucent. Set aside.
In a large pot combine chicken broth, beans, and seasonings and bring to a boil over medium-high heat.
Add chicken mixture, reduce heat and gently simmer for 30 minutes.
Add sour cream and whipping cream stirring well to combine.
Serve! You can also add a garnish of shredded Colby Jack cheese if desired.
