This dish is a salmon dish cooked in a creamy sun-dried tomato sauce. The salmon is typically seasoned and pan-fried until cooked through. The sauce is made by blending sun-dried tomatoes with cream, herbs, and seasonings, then simmering until thickened. The sauce is poured over the cooked salmon and served with rice or pasta.
Ingredients:
- 4 salmon fillets
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 cup sun-dried tomatoes
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tbsp chopped fresh basil
Instructions:
Season the salmon fillets with salt and pepper.
Heat olive oil in a large pan over medium-high heat. Add the salmon fillets and cook until browned on both sides and cooked through, about 5-7 minutes per side. Remove from pan and set aside.
In a blender, puree sun-dried tomatoes with the cream, garlic, Parmesan cheese, and basil until smooth.
In the same pan over medium heat, pour the sun-dried tomato mixture and bring to a simmer. Cook until slightly thickened, about 5-7 minutes.
Return the salmon fillets to the pan and spoon the sauce over the salmon. Serve immediately with rice or pasta. Enjoy!
