Ingredients
500 gr of flour
Salt
100 ml warm milk
150 ml lukewarm water
1 sachet of baker's yeast dosed for 250 gr of dough, or 2.5 or 3 gr
1 tablespoon caster sugar
To brown
2 egg yolks
For garnish
270 gr minced meat (beef for me)
2 small tomatoes
1 red pepper
2 small red onions
1 garlic clove
a good tablespoon of tomato puree
1/2 teaspoon oregano or bay leaf
1 teaspoon of salt
Chopped parsley or chopped fresh coriander
1 tablespoon paprika
1 teaspoon of pepper
2 tablespoons olive oil

Preparation of meat pies
In the mixing bowl (or in a bowl for mixing by hand), pour the flour, salt on one side, sugar and baking powder on the other.
Add the warm liquids and knead the mixture until you get a ball that comes off the wall of the bowl.
Cover and let rise in a place protected from drafts for about 1 hour.
For the garnish, wash and cut the tomatoes.
Do the same with the peppers, onions and parsley and coriander.
Switch to the mini chopper and mix to reduce to pieces.
Add all these ingredients to the minced meat as well as the spices, the tomato puree.
Drizzle with olive oil and mix well to obtain a homogeneous mixture. Cover and place in the fridge.
When the dough has risen, degas and cut it into small balls of identical size (about 80 gr).
Lightly flour your work surface and shape the pizza pide by giving them an oval or round shape as in the video.
Place a tablespoon of stuffing in the center without reaching the edges, then fold the edges inward over the stuffing, keeping the oval shape.
Place on a baking sheet lined with parchment paper. And continue until the dough and stuffing are used up.
Brush all the edges with egg yolk. Preheat the oven th. 200 ° C and cook the pides until they become golden brown.
To be enjoyed warm or cold.
