Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup whiskey
  • 1/4 cup brown sugar
  • 2 tbsp. soy sauce
  • 1 tsp. cornstarch
  • 1 tsp. minced garlic
  • Salt and pepper to taste
  • 2 tbsp. olive oil
  • Pineapple chunks for garnish

Instructions:

Season the chicken breasts with salt and pepper.
In a small bowl, whisk together pineapple juice, whiskey, brown sugar, soy sauce, cornstarch, and minced garlic.
Heat olive oil in a large pan over medium heat.
Add the chicken breasts to the pan and cook for 6-8 minutes on each side, or until cooked through.
Remove the chicken from the pan and set aside.
Pour the pineapple juice mixture into the pan and bring to a boil, stirring continuously.
Reduce heat and let the sauce simmer for 2-3 minutes, or until thickened.
