Perfect Slow Cooker Bacon Potato Corn Chowder

 Ingredients

1 pound small red potatoes cut into 1 inch cubes

1 small yellow onion diced

2 12 oz bags frozen whole kernel sweet corn

3 cups chicken broth

1 tsp salt

1/2 tsp ground pepper

1 tsp dried thyme

1 tsp dried basil

1 tsp onion powder

2 cups half and half

2 TBSPs corn starch

1/2 pound bacon cooked crisply and diced


Instructions

In a slow cooker combine the potatoes, onion, corn, chicken broth, salt, pepper, thyme, basil, and onion powder.

Cook on low for 6 to 8 hours or high for 3 to 4 hours.


Combine the half and a half and the corn starch in a small bowl, whisking until smooth. Stir in the mixture with the bacon and cook 10 to 15 minutes more on high or until the sauce is thickened.
