How to Make Blackened Rockfish with Avocado Aioli



Ingredients

Recipe makes 2 Servings

2 rockfish filets, skin removed, rinsed, and patted dry 

1/2 Tsp kosher salt 

1/2 Tsp smoked hot paprika 

1/2 Tsp black pepper, freshly ground 

1 1/2 Tbsp coconut oil, melted, divided use 

1/2 cup(s) olive oil mayonnaise 

1 small ripe avocado 

1/4 cup(s) H‑E‑B That Green Sauce 

1/2 Tsp fresh garlic, finely mashed 

2 Tbsp fresh cilantro, finely chopped

Instructions

1In a small bowl mix together salt, paprika, and pepper.

2Rub fish with half of the melted coconut oil and pat both sides with seasoning mix. Coat fish heavily with seasoning.

3In a blender add mayonnaise, avocado oil, "That Green Sauce," garlic, and cilantro. Blend together until smooth. Add a little water to thin if necessary to get a smooth, drizzling consistency

4Heat a skillet over medium heat. Add remaining coconut and cook fish on both sides for 4 to 5 minutes, depending on thickness.

5Remove from skillet and drizzle with Avocado aioli just before serving. Garnish with additional cilantro if desired.
