 This chicken salad with creamy peanut sauce is a real treat for lovers of sweet and savory mixes. Made with romaine, crispy snow peas, juicy lychees, sweet fruit wedges, and chicken, it is bursting with flavour and healthy ingredients.


Perfect Asian Chicken Salad


Ingredients
Chicken salad:
500 g romaine lettuce
150 g snow peas
1 can lychee (398ml), drained and halved
1 large navel orange, peeled and cut into wedges
1 red plum, pitted and sliced
4 green onions, thinly sliced
370 g chicken breast
Creamy Peanut Sauce:
1/3 cup low-fat mayonnaise (90ml)
4 tbsp (60 mL) smooth peanut butter
1 finely chopped garlic clove
Preparation
Finely chop the lettuce in a bowl. Cut off the ends of the snow peas and remove the threads. Cut the pears in half diagonally and add them to the salad. Add the lychees, orange, plum, and green onions. Mix everything.
Coat a heavy-bottomed pan with non-stick cooking spray and heat over medium-high heat for about 2 minutes. Brown chicken until cooked through, about 4 minutes per side.
To make the sauce, combine the mayonnaise, peanut butter, and garlic in a small cup. Cut the chicken diagonally into thin slices and place the pieces on the salad, in the bowl. Just before serving, sprinkle the salad with the sauce and mix.
