 This baked chicken rice is delicious and easy to prepare as all you have to do is put all the ingredients in the oven in a large dish and you're done! My kids loved it, and to my surprise, so did I! I was a bit afraid that the rice would be too soft and sticky or on the contrary too hard, and the chicken not cooked enough. But not at all, this cooking of rice in the oven is perfect! The rice is soft but not sticky, and the chicken is cooked just right, tender and tasty.


Baked Chicken Rice


INGREDIENTS

For 6 persons


- 6 skinless chicken thighs

- 1 chopped onion

- 2 crushed garlic cloves

- 2 tablespoons of olive oil (or 30 g of butter)

- 270 g long-grain white rice

- 375 ml of chicken broth (375 ml of lukewarm water mixed with 1 chicken broth cube)

- 310 ml of hot water


Spices for chicken

- 1 teaspoon of paprika

- 1 teaspoon of dried thyme

- 1/2 teaspoon garlic powder

- 1/2 teaspoon of onion powder

- 1 teaspoon of salt

- 1/2 teaspoon of black pepper

PREPARATION

1- Preheat the oven to 180ÂșC.

2- Remove the skin from the chicken if it has not already been done, rinse it, and then drain it well. Divide the chopped onion and crushed garlic in a baking dish, toss with the butter or oil and bake for 15 minutes, watching so that it does not burn.

3- Meanwhile, mix all the spices in a small bowl, then massage the chicken well with the spices on all sides. Leave besides.

4- Remove the dish from the oven. Add the rice and mix well with the onions and garlic.

Distribute the rice evenly in the dish, then place the chicken pieces on the rice. Then pour the chicken broth and water around the chicken. Important, around chicken, not chicken!

5- Cover with foil, then bake for 35 minutes. Remove the foil and cook for an additional 15 minutes.

Leave to rest for 5 minutes. Serve and enjoy!
