I propose to you today, of a hash of chicken. which is really delicious and fast does not take many ingredients. This delicious and generous dish is perfect for a family meal or with friends. Ingredients
Ingredients:
1.5 kg of potatoes
1.5 kg chicken, preferably thighs)
2 carrots
1 leek
2 onions
2 cloves
2 cloves garlic
2 tbsp. chopped parsley
50g grated Emmental or 30g breadcrumbs
Butter
olive oil
1 chicken stock cube
salt and pepper
Preparations
Clean the leek and cut it into 3, peel the carrots and cut them into sections, peel the onions and prick one of 2 cloves. Reserve the second for the mince.
Place the chicken thighs in a casserole dish, cover them with cold water and bring to a boil for 5 min. Rinse them under cold water, drain them and wash the casserole dish.
Return the chicken to the casserole dish, adding the leeks, carrots, and sliced onion. Cover with cold water, bring to a boil, and skim if necessary. Add the chicken stock cube, a little salt, and cover. Cook over medium-high heat for about 50 min.
Meanwhile, prepare a fairly firm mash with the potatoes.
Once the chicken is cooked, drain it, retaining the broth. Remove the skin and loosen the flesh from the bones. Return the bones and skin to the broth.
Cut the flesh into very small pieces along with the raw onion and carrots. Melt a nice knob of butter and a drizzle of olive oil in a pan, brown the onions for 3 minutes then add the chicken and carrots, moistening with 15 cl of broth. Cook over medium heat for 5 minutes, stirring, then stir in 1 chopped garlic clove and the parsley. Adjust the salt and pepper seasoning.
Preheat your oven to 190 °.
Butter your gratin dish and rub the bottom of the dish with the remaining clove of garlic. Cover with 1/3 of the mash then add the chicken mince, leveling the surface well, and cover with the remaining mash.
Cross the top, sprinkle with the grated Emmental, add a few knobs of butter, and sprinkle the top with a ladle of broth.
Bake for 40 minutes, watching the browning.
I saved the broth with the bones and leek to make a soup with a few sprinkles.
