Lemonade-Flavoured Chicken Thighs with Garlic Sweet Potatoes


Ingredients

4 skinless chicken thighs

1 can frozen lemonade concentrate, thawed

30 ml (2 tbsp.) Low sodium soy sauce

4 sweet potatoes, medium

15 ml (1 tbsp.) Olive oil

2 garlic cloves, chopped

Preparations

This recipe is made with concentrated lemonade juice, but fear not!

Place the chicken thighs in one or two large plastic zipper bags, along with the lemonade and soy sauce. Seal the bag and turn the chicken pieces a few times so that they are evenly coated with the liquid. Marinate the meat in the refrigerator for a few hours or overnight.

Remove the chicken from the marinade which is poured into a small saucepan and brought to a boil. Reduce by half over medium-high heat.

Prepare the sweet potatoes while the marinade is boiling. Cut in half, then into quarters - about eight pieces per medium potato. Toss them in the oil with the garlic in a microwave-safe bowl. Cook over high heat for five minutes and stir again. Place the potatoes in a grill basket.

Brush barbecue grill with oil and preheat over medium-high heat. Place the chicken on the grill, skin side down. Cook the potato wedges in the grill basket on the barbecue along with the chicken. Turn the chicken once, and cook until browned and crispy, and a thermometer inserted into the meat reads 74 ° C (165 ° F). Baste often during cooking. Discard the rest of the marinade.
