Pasta that's quick and presto! This fettuccine is made with generous golden chicken strips to satisfy the taste buds of the whole family. Pine nuts add a crunchy texture.
Ingredients
Fettuccine
Fettuccine 350 g
Italian tomatoes
Italian tomatoes 4
Chicken strips
Chicken strips 540 g
Fresh basilic
Fresh basil 45 ml (3 tbsp.)
Parmesan cheese
60 ml (1/4 cup) Parmesan, grated
Also provide:
2 onions
30 ml (1 tbsp.) Olive oil
Optional:
45 ml (3 tbsp.) Pine nuts
Preparation
In a pot of salted boiling water, cook the pasta until al dente. Drain.
Dice the onions and tomatoes.
In a skillet, heat the oil over medium heat. Brown the onions. Add the chicken and brown for 1 minute on each side.
Add the pasta, tomatoes, basil and, if desired, pine nuts. Salt and pepper. Cover and simmer, 12 minutes, until the inside of the chicken meat has lost its pinkish tint. When ready to serve, sprinkle with Parmesan.
