Split Pea Soup with Smoked Bacon


Ingredients

400 g split peas

 150 g smoked bacon

1 onion

1 leek

30g butter 

3 liters of water

salt, pepper croutons of bread fried in butter

Preparations

Soak the split peas in 2 liters of water for at least 2-3 hours. Rinse them in cold water and drain them. Put them to cook in 3 1 of cold water; skim as soon as the water boils, salt and pepper. Brown the chopped onion and leek in butter as well as the bacon cut into small cubes. Pour them into the soup once browned. Leave to cook over very low heat for another hour. You can strain the soup through a sieve or serve it as is. Once the soup is in the soup tureen, garnish it with small croutons fried in butter.
