This American-style chicken soup with vegetables and noodles is quite easy to make. To make the recipe more complete, I'm going to present it to you by making a fairly simple homemade chicken broth. However, if you use a ready-made broth, the chicken noodle soup can be made in no time.
Ingredients
1 l. chicken broth
150 g of noodles (or any other soup pasta)
1 or 2 carrots, diced
1 or 2 stalks of celery, cut into small pieces
1 onion, chopped
2 garlic cloves, chopped
Fresh thyme (optional)
2 or 3 tablespoons of olive oil
Salt and pepper
For the broth:
2 skinless chicken thighs
1 chopped carrot
1 onion, halved
1 leek, chopped
Herbs: parsley, thyme, bay leaf, and leek leaf.
Methods
Put all the broth ingredients in a saucepan and cover with water.
Bring to a boil and remove the foam that forms on the surface.
Let boil for 1 hour 30 or 30 minutes in a pressure cooker.
Pass the broth through a sieve and crumble the chicken.
Heat the oil in a saucepan, sauté the onion with the carrot and celery for 6 or 7 minutes over medium heat.
Add the garlic and thyme and sauté for 1 more minute.
Add 1 liter of chicken broth and cook for 10 minutes.
Then add the pasta, cook for the time indicated by the manufacturer.
In the last 5 minutes, add the chicken.
