Ingredients:
4 boneless skinless chicken breasts
8 strips thick-cut bacon, cooked
½ cup honey
½ cup dijon mustard
2 Tbsp lemon juice
½ tsp paprika
½ tsp salt
dash cayenne pepper
1 Tbsp olive oil
1 cup shredded sharp cheddar cheese
Instructions:
Mix together honey, dijon mustard, lemon juice, paprika, salt, and cayenne pepper.
Place chicken in a ziplock bag. Pour marinade over chicken and place in the refrigerator for 1-3 hours, up to overnight.
Preheat oven to 400ºF.
Heat olive oil in a skillet over medium-high heat. Add chicken. Cook 3 minutes per side. Place chicken on a large baking sheet. Cook in the oven for 10 minutes.
Remove chicken from oven. Top with cooked bacon and cheddar. Return to oven and cook an additional 3-5 minutes, until cheese is melted.
