Today I'm proposing a wrap made with grated potatoes. I sometimes add a little carrot or zucchini to my potatoes, but the base remains pretty much the same. I prefer to use less egg, add a little cheese, and have a very crispy wrap like a "giant doormat" that I then garnish with the cheeses I find in my refrigerator.
Ingredients
For 4-5 people:
800 g of potatoes (variety which contains a lot of starch)
1 onion
3 cloves of garlic
100 to 140 g of grated cheese
1 egg
parsley or chives
salt and pepper
1 piece of mozzarella (about 200 g)
6 slices of ham
Preparations
In the Thermomix bowl, put the onion cut into quarters and the garlic cloves. Mix for 5 seconds at speed 5. Scrape the edges.
Peel the potatoes and cut them into large pieces.
Put the pieces in the bowl of the thermomix and mix for 15 seconds at speed 4. look at the texture, the pieces should be chopped but not too fine.
Salt and pepper. Add the chopped chives or chopped parsley. Add the raw egg and grated cheese (100 to 140 g)
Mix in reverse for 20 seconds at speed 4.
Spread everything on a baking sheet covered with baking paper or on a silicone baking sheet (ideally a silicone baking sheet with edges, mine measures 30 x 40 cm) Press down well.
Bake at 180 ° for 30 to 35 minutes. The potatoes should brown, lightly toast even.
Take the dish out of the oven and turn everything over on a sheet of baking paper (help you with a board or a plate) unmold the "doormat" very, very delicately. Put it back on the baking sheet and cook for another 5 minutes on the other side (the side that was below is on top)
The cooking time will depend on the variety of potatoes (between 30 and 40 minutes)
Remove the meat from the oven, distribute the slices of the ham so as to completely cover the surface. Cut slices in the mozzarella and arrange them lengthwise (make one or two lines of cheese, one at the edge of the mat and the other in the middle)
Then roll the doormat in the direction you want (we will have a little thick and long or thick doormat but shorter)
Put it back in the oven at 180 ° for 10-15 minutes to melt the mozzarella.
