Easy Sausage and Rice Casserole

Easy Sausage and Rice Casserole

1 package (650 g) Lafleur Pure Pork Sausages
15 mL (1 tbsp.) olive oil
1 medium onion, diced
1 cup (250 mL) diced celery
1 cup mushrooms, quartered
½ red bell pepper, diced
½ green bell pepper, diced
2 cloves garlic, finely chopped
250 mL (1 cup) long grain rice
250 mL (1 cup) chicken broth or water
250 mL (1 cup) tomato juice
½ tsp. dried oregano
¼ tsp. thyme
1 tbsp. paprika
Salt and pepper to taste
2 tbsp. chopped fresh basil
1.Blanch sausages in a pot of boiling water for 5 minutes. Remove from water and cool. Cut sausages into large bevels and set them aside.

2.In a large pot, heat oil, add celery, onions, peppers, and mushrooms, and cook for 2 minutes.

3.Add sausages and cook for 2 minutes.

4.Add garlic and rice and mix well.

5.Add broth, tomato juice, oregano, thyme, paprika, salt, and pepper to taste.

6.Cook, covered, over low heat for about 30 to 35 minutes until rice is cooked and no liquid remains.

7.At the end of the cooking time, add the fresh basil as a garnish and serve immediately.
