Blackened Tilapia


Ingredients

4 fillets of tilapia or other white fish

1 lemon, sliced

1 tablespoon of canola oil

2 tablespoons of butter

Blackened seasoning

3/4 teaspoon garlic powder

1/2 teaspoon of salt and pepper

1 1/2 teaspoon of paprika

1 teaspoon of oregano

1/2 teaspoon ground cumin

1 1/2 teaspoon of brown sugar


Preparations

Combine seasonings and brown sugar in a small bowl.

Rub the seasoning on the fish and the pan or bake as follows.

The furnace

Heat oil and butter in a cast iron skillet over medium-high heat.

Add the seasoned fish and a few lemon wedges and cook 3 minutes per side or just until done (do not overcook).

Serve with the rest of the lemon.

Oven

Install the rack and place the oven rack on top.

Cover a tray with foil and add tilapia fillets and a few lemon wedges. Grilled 3 minutes.

Flip the fish and an additional 3-4 minutes until tender and flaky. Do not overcook. Serve with the rest of the lemon.
