Today I show you how to make Sicilian brick chicken. This simple dish is a must-have for anyone looking to impress friends and family with a new cooking skill!
Ingredients
1 whole chicken, cut into 8 pieces
2 small white onions, diced
6 slices of cured prosciutto, chopped
3 tablespoons of olive oil
4 cloves garlic, chopped
1/2 teaspoon red pepper flakes, or to taste (optional)
Salt and ground black pepper to taste.
Preparation
1. Place chicken in a baking dish, cover with foil and bake for 20 minutes at 400 degrees F/200 C / Gas Mark 6 until cooked through and slightly golden on top. Place chicken on a plate or platter to serve.
2. Add half of the cornflour to the pot with enough water to make a thick paste (about ⅓ cup). Add oregano & parsley while the paste is hot.
3. Lightly pan-fry chicken on the pan until cooked through, turning once. Remove from heat, place chicken on a platter, and cover with tomato salsa. Place tortilla on top of the salsa and carefully flip over to serve. Garnish with fresh rosemary or Oregano leaves, if you wish.
4. Place tortilla in a skillet over medium heat until warmed through. come back and do the same with the other side. Remove from heat and top with basil mayonnaise, garlic sauce, or your choice of vinaigrette.
5. Pile on a tortilla with chicken, salsa, mayo/dressing of choice, and chopped basil to serve.
6. Add chili flakes for extra spice!
7. For shrimp version: season shrimp with oil, salt & pepper, rosemary & mint leaves before baking at 400 degrees F/200 C / Gas Mark 6 for about 12 minutes until cooked through. Remove from oven and garnish to serve as described above.
