Black Forest Brownies Pecans


Ingredients

3/4 cup natural cocoa powder

1 cup pecans, chopped

1 cup pitted Medjool dates, soaked in water for 5-10 minutes, and drained 


Instructions 

1. Line a small rectangular brownie pan with parchment paper. Make sure there's enough paper that hangs over the sides of the pan so that the brownies will be easy to remove after they are set.

2. In a food processor, combine the pitted dates and melted chocolate and blend until smooth. Add the vanilla and pecans and pulse until well combined.

3. Transfer this mixture to the lined brownie pan and smooth out so you have a nice flat surface.  So that it is firm, let it cool for two hours. You can also freeze them for 15 minutes if you're in a hurry, just let them rest at room temperature for 10 minutes before cutting into squares.

4. Store chilled in an airtight container. Should last about a week.

Tips and Suggestions: Replace the water for soaking with coffee, tea, or even fruit juice! You can experiment with different kinds of nuts and dried fruits if you like!
