These cookies are scrumptious and full of cranberries and chocolate chunks. They also make a wonderful holiday gifts for family and friends.


Cranberry Chocolate Chunk Cookies Recipe


Ingredients

1/2 cup unsalted butter 

1 cup granulated sugar 

2 eggs yolks 

4 cups all-purpose flour 

3 teaspoons baking powder

1/2 teaspoon salt 

3/4 cup dried cranberries (optional)

1/2 teaspoon vanilla extract (optional)

8 ounces white chocolate chips (or dark chocolate chips if not vegan)  

1-1/2 cups semisweet chocolate chunks or unwrapped bittersweet or milk chocolate.


Directions

1. Preheat the oven to 375 degrees F with rack in upper-middle position.

2. In a large bowl, cream the butter and sugar until light and fluffy, Add the yolks and beat well. In a medium bowl, combine the flour, baking powder, and salt.

3. Alternate add the dry ingredients to the creamed mixture, then add in cranberries or chocolate chunks. Stir in vanilla if using, then add the chocolate chips or chunks. Let batter sit while you prepare your baking pans.

4. Divide batter evenly between two 8-inch round cake pans with removable bottoms (or one 9x9 pan) . Bake for 20-30 minutes or until a toothpick inserted near the edges comes out clean. Transfer onto a wire rack to cool.. Let cool completely before cutting.
