Ingredients
1 cup of coconut flakes (unsweetened)
½ cup of butter, at room temperature
1/3 cup of brown sugar
1/3 cup of white sugar
2 teaspoons of vanilla extract
Pinch of salt
3 1/2 cups all-purpose flour
Method
Preheat oven to 350F. Mix the flour and salt. In a larger bowl, cream the butter and sugars using a hand mixer or electric mixer. Add in the vanilla extract and continue to beat until light and fluffy. Slowly add the flour into the butter mixture while gradually mixing. Add in the coconut flakes, mixing until evenly coated in the flour mixture. Spoon rounded spoonfuls onto a baking sheet lined with parchment paper. Bake in the oven for 15 minutes or until golden brown on top and slightly hard to touch.
