Chocolate chip lava cookie

 Lava cookies are great for lazy summer days when you want something warm and comforting to fill the kitchen with the smell of fresh-baked cookies. These cookies are oozing with chocolate chips, giving them their namesake name. This recipe is easy to make and makes up for any lack of speed in prep time by only taking 10 minutes in the oven.




Ingredients

1/2 cup butter, softened

1/4 cup light brown sugar

1 egg

2/3 cup granulated sugar ( 2 cups   * ) 

3 1/2 cups flour

7 oz bag chocolate chips (12 oz)


Directions

Preheat oven to 350. Lightly grease a cookie sheet and set it aside. In a medium bowl, cream the butter and brown sugar until smooth. Add the egg and mix well. Gradually add the granulated sugar while mixing just until combined.  Add the flour a bit at a time to form a soft dough. Be careful not to overmix. Add the chocolate chips and mix well.  Drop heaping spoonfuls of dough onto the cookie sheet and bake for 8-10 minutes. Enjoy! (**)

Exceptionally delicious with a tall glass of cold milk.


Notes:

*You can make your own 2 cups of granulated sugar in a food processor or blender easily enough. Just add 2 cups of sugar to the processor or blender and grind it for a minute or two.  Sift before using if you want absolutely no grainy sugar bits in your cookies. It usually isn't necessary, though, as your average eater won't notice them if their eyes aren't trained to pick up on that sort of thing.
