 If you love French toast and creme caramel, then this is the perfect treat for you! The moist eggy bread, the sweet caramel custard, and tart strawberries all work together to make a mouthwatering breakfast. It's satisfyingly filling and will give you plenty of energy to power through the day. Ingredients

1 tsp vanilla extract 

2 tbsp milk of choice 

1/4 cup raw agave nectar 

3 eggs 

1/2 tsp cinnamon 

1/4 tsp nutmeg pinch of salt 

3 tbsp coconut flour 

Topping: 

fresh strawberries chopped 

pecans almond butter whipped cream 


Instructions

Preheat oven to 350 degrees. Lightly grease a 9x13 baking dish (or similar size) and set it aside. Combine the vanilla extract and almond milk in a large mixing bowl and stir until mixed (about 2 minutes). Add eggs, agave, cinnamon, nutmeg, and vanilla extract mixture to the bowl with the caramel sauce. Beat with an electric hand mixer or whisk until well combined. Stir in coconut flour until well combined. Place sliced strawberries in the bottom of the prepared baking dish (1/3 of the strawberries should be smashed). Pour batter over strawberries creating an even layer (you may have some leftover batter depending on how large your dish was). Sprinkle pecans on top of batter (optional). Place in oven and bake at 350 degrees for 35 minutes. Check after 30 minutes. Last 5 minutes, switch to broil (watch carefully). Remove from oven and top with whipped cream (optional), vanilla ice cream, or sliced strawberries. Enjoy!
