Love pizza but stay away from gluten? When it comes to spreading love and creating a healthy and satisfying dinner, we’ve got your back. Made with quinoa and tofu, this gluten-free pepperoni pizza recipe is an excellent substitute for the traditional version. In this dish, quinoa provides protein while tofu satisfies that vegan craving. And yet our new take on the classic recipe remains equally delicious—hello herbaceous tomato sauce, spicy pepperonis, and creamy mozzarella!
Ingredients
-1 dough (you can buy pre-made dough and thaw it in the fridge, or make your own dough)
-1/4 cup flour
-2 tbsp of vegetable oil
-1 tsp salt
-Cornmeal for dusting on the bottom of your pan
Toppings:
-Pizza sauce (we suggest our easy tomato sauce recipe)
-Mozzarella cheese
-Pepperoni slices, we recommend using 8 slices.
Method
Preheat oven to 425 degrees Fahrenheit.
In a large mixing bowl, combine the flour, salt, and oil. Mix together until the mixture is well combined.
On a floured surface, roll out the dough until it is 1/8 inch thick. Make sure to dust the rolling pin in flour between rolls so they are not sticky and don't stick to your kitchen counter while you shape them.
Cut out circles with a cookie cutter (or use your fingers) big enough to fit your pizza pan and place them on a baking sheet with cornmeal or parchment paper for easy cleanup. If you have difficulty getting rounder circles don't worry about it, it will still taste fine!
Brush each circle with sauce and sprinkle generously with cheese. Add the pepperoni slices and sprinkle some more cheese on top.
Bake for about 10 minutes or until cheese starts to bubble and pizzas are golden brown.
Remove from oven and allow to cool for a few minutes before serving.
