Everyone loves pizza, and when you make it at home, you can customize the toppings based on your family's tastes. This recipe is perfect for the weekend when there's more time to cook and enjoy!
Ingredients
All-purpose flour (for dusting)
olive oil (to brush on dough)
sugar (to sprinkle over the dough)
salt (to sprinkle over the dough)
smoked chicken breast halves without skin (~1/2 lb.)
fresh Mozzarella cheese (~4 oz.)
pitted black olives (~14)
garlic cloves (1 or 2 minced), dried oregano leaves, ground black pepper.
Instructions
Preheat oven to 450°F. Line cookie sheet with parchment paper.
Cut chicken breast in half horizontally. Pat dry and lightly pound with tenderizer/chopped garlic. Set aside.* Lightly flour your countertop.
Roll dough out to 1/4-inch thickness, and spread it over your parchment-lined cookie sheet so that it is about 1 inch bigger than the size of the dough.
The dough should be slightly thicker around the edges of the pan, and thinner in the middle so that it can rise evenly across the entire pan during baking time. Set aside.* In a small bowl, toss together olives, garlic, oregano, black pepper & olive oil. Set aside.
Spread ~1/4 of the cheese onto dough, leaving ~1-inch to the border. Spread chicken on top of cheese & drizzle with olive mixture. Add more cheese on top loosely, then dot with remaining olives.
Bake in preheated oven for 15-20 minutes until crust is golden brown and cheese is bubbling and slightly browned. Let the pizza rest for 5 minutes before slicing with a sharp knife and cutting it into individual slices.
