Ingredients
1 1/3 cup white sugar
1 teaspoon vanilla extract
1 egg, beaten
3 cups all-purpose flour
1 teaspoon baking powder
2 tablespoons brown sugar
2 mashed bananas (garnish)
1/4 cup walnuts (garnish)
Preparations
Preheat oven to 350 degrees
In a bowl, add all dry ingredients and mix together.
Add butter and mix until it starts to clump in your hands.
Grate a little over 1/2 of the banana (save the rest for later) into the dough. Add egg, vanilla extract, and ground cinnamon to your grated banana and incorporate thoroughly with your hands. Mix on low speed until well-combined- should take approximately 2 minutes.
Pour mixture into prepared pan and spread out evenly so the surface is clean without any holes or gaps in it.
Add the remaining banana chunks, and press them down into the dough. Add walnuts on top of that layer.
Bake for 10-15 minutes or until a toothpick inserted in the center comes out clean. Allow cooling completely before removing from pan.
