We are taking the classic ice cream sandwich up a notch with this recipe. The cookies are packed with buttery cookie dough, and the ice cream is a creamy, crunchy mixture of vanilla ice cream sandwiches, marshmallows, chocolate chips, and cookies. Ingredients
2 cans (14 oz) sweetened condensed milk
3 tablespoons vanilla extract
1 1/8 cups heavy whipping cream
2 tablespoons unsalted butter
Method
1. Take two cookies and spread either the cookie butter or vanilla icing on top of both of them. Sandwich them together so you have one large "sandwich". Make another sandwich just like this to use as the other part of your ice cream sandwich.
2. Once you are done, carefully place them into the freezer for at least 15 minutes to set.
3. To make the sandwich even more festive, you can use decorated cookies instead of plain ones. I suggest using chocolate or vanilla cookie sheets with white chocolate chips or sprinkles!
