Ingredients
2 tbsp butter
1 cup of diced onion (1 small onion)
4 cloves garlic, minced or pressed through a garlic press (or about 1 tbsp)
1 tsp salt for pasta water and 1 tsp for when cooking onions.
½ tsp cumin for onions and rest for pasta water.
1¼ cups heavy cream for pasta water.
1 cup chicken or vegetable broth
2 tbsp flour
2 to 3 medium-sized tomatoes, diced (about 1½ to 2 cups of diced tomatoes) [can use canned]
½ to 1 can of fire-roasted crushed tomatoes (I used one with spice packs in it) – I only used ½ can. If you don't have any on hand then the other half of fire-roasted crushed tomatoes is fine.
Preparations
1. Cook the pasta according to the instructions on the box
2. In a saucepan over low heat, melt butter until foaming subsides and stir in flour until smooth
3. Slowly whisk in milk
4. Bring mixture to a simmer over medium-low heat and continue whisking until thickened
5. Stir in Queso cheese until melted
6. Add garlic powder, chili powder, and cayenne pepper to taste
7. Drain pasta and pour queso sauce over it, serve hot!
8. For a creamier sauce, stir in sour cream
9. For a spicy kick, add red chili flakes
10. And for an extra kick, mix in crushed jalapenos or crushed habanero peppers
11. Garnish with grated cheese and serve with tortilla chips!
