Chicken and dumplings are a classic Cajun dish that doesn't require any special ingredients or fancy techniques. This recipe is the easiest way to cook this comforting dish in a hurry, and it uses ingredients that you most likely already have on hand. And because it's so easy, it makes for one great weeknight dinner idea!
A quick 30-minute meal with still lots of flavor: what a winner! Now simmer away on your stovetop with some hot biscuits on the side. Good stuff, indeed.
Ingredients:
1 large chicken, cut into bite-sized pieces (you may use breasts, thighs, or thighs with drumsticks)
2 yellow onions chopped (large pieces)
2 stalks of celery chopped (medium size pieces)
3 carrots chopped (medium size pieces)
1/8 cup flour + more for dusting chicken - if needed(see note below on how to add more flour to chicken and dumplings recipe if needed)
2 bay leaves. You can easily get bay leaves at any grocery store. I buy the kind from Costco that comes in a bag. You may also find them at World Market, close to the other spices, usually on the bottom shelf.
1 teaspoon dried thyme (remember to use fresh thyme if you have some)
1 teaspoon salt
Directions:
1. Place all ingredients in the cooker.
2. Lock lid into place, select High Pressure, and 30 minutes cooking time.
3. When beep sounds, turn off the pressure cooker and use a natural release for 10 minutes.
4. Carefully use a Quick or Release to release any remaining pressure. If you want to make "chicken broth" instead of "chicken stock" don't cook past the first 10 minutes with the lid locked into place and without any pressure in the pot! Soup & Stew
