Ingredients
1 package Double Chocolate Enriched Instant Dry Yeast
1/2 teaspoon of instant dry yeast
1/2 cup flour (45 gr. or ¼ cup)
3 tbsp. unsweetened cocoa powder (9 gr.)
1 tsp. baking soda
1/2 tsp baking powder
1/2 tsp salt (up to 2 tsp)
2 tbsp. powdered sugar (6 gr.)
6 tablespoons butter, softened (90gr.)
1 egg 2 cups Nilla Wafers crumbs
Directions
Preheat oven to 375°F / 190°C. Prepare a cookie sheet by lining it with parchment paper or by spraying it with nonstick cooking oil. In a large bowl, whisk together the dry ingredients: flour, cocoa powder, baking soda, cream of tartar, and salt. Set aside. In a small bowl, beat the butter and sugar with an electric mixer until light and fluffy.
Add the egg and mix until combined. Using a spatula, gradually add the flour mixture to the wet ingredients, stirring just until combined.
Gently fold in crumbs until just combined; do not over mix. Using a heaping 1 tbsp. the measure of dough at a time, roll into balls.
Place on prepared baking sheet 1 inch apart (you will have 12 cookies). Bake for 7 to 8 minutes or until firm on the outside but still soft in the center.
