If you're tired of the same old baked potatoes, give these fried potatoes a try. The recipe doesn't take long to cook and they make an excellent side dish to grilled chicken or steak.
Ingredients:
8 - 10 baby red potatoes
2 tablespoons canola oil (divided)
Salt & pepper to taste
Directions:
Wash and scrub potatoes clean with a vegetable brush before cutting them in half lengthwise.
Combine 1 tablespoon canola oil with 1/2 teaspoon salt and 1/4 teaspoon pepper in a large bowl. Season both sides of the potato wedges with this mixture, squeezing lightly to make sure it sticks.
Heat remaining 1 tablespoon of oil in an extra skillet over medium heat. Place potato wedges cut side down in hot oil, being careful not to crowd the pan. Cook for 2 - 3 minutes per side until potatoes are lightly browned and crisp.
Remove from skillet and transfer to a plate lined with paper towels or a clean kitchen towel. Serve warm or at room temperature.
