 Mexico has a wide variety of different food. It's easy to get your taste buds satisfied, no matter what you're in the mood for. One type of food, in particular, that's quite diverse is Mexican pizza. There are many versions, but they all have a similar base: they can be topped with cheese, tomatoes, spinach, olives, and more! You may also want to add some additional toppings like onion or pepperoni to make it even tastier.


Mexican Pizzas Recipe


Ingredients

For the sauce: 

2 cloves of garlic, 

3 tbsp of vinegar, 

1 1/2 tsp salt, 

1 1/2 tsp sugar.

For the dough: 

750 g of flour, 0.3 cups of lard.

1 tsp yeast

For the toppings: 

A can of tomatoes, some spinach, some cheese, pepperoni... anything you like!


Preparations

Put all the ingredients in water and let it sit for 12 hours.  then put them in a blender and make sure that the mixture is blended completely.  (this will give it a smoother texture) then knead the dough roughly four times and leave it to rise for 2-4 hours

I had leftovers from my second batch of bread so I chose to use them this time around.  If you do too, leave them out in your fridge for a few days before you start making your pizza.

Cut tomatoes and spinach into small cubes.

Begin heating the oven at around 250° Celsius (480° Fahrenheit) and start making your sauce.

When the oven reaches 250 °C begin kneading your dough again for a further 5-10 minutes.  After that, punch it down and shape it into a ball before you knead it once more for 10 minutes.  The ball should be nice and smooth to touch, otherwise, it means that your dough hasn't risen enough!

After that, you can cut up pepperoni and cheese into small pieces.

Roll out the pizza dough with a rolling pin until it's nice and thin, then place on an oven tray lightly sprinkled with cornflour or semolina.
