 Corn noodles are a popular and delicious dish that can be served in many different ways. This recipe incorporates hot peppers into the ground corn noodles which gives it a unique and flavorful twist. The dish itself is also perfect for vegetarians or those who are vegan-friendly because it uses just one type of noodle, corn pasta. If you are looking for a vegetarian dish that's also delicious and can be cooked in a variety of ways, this will surely fit the bill.


Spicy Corn Noodle Recipe


 Ingredients: 

2 cups Japanese Kombu (dried kelp) 

2 1/2 cups water 

3 tablespoons olive oil 

1 red bell pepper, chopped 

1 green bell pepper, chopped 

1 yellow bell pepper, diced 

2 cloves garlic, minced 

1 jalapeno, seeded and diced 

1-inch piece of fresh ginger, peeled and grated 

3/4 cup corn kernels (fresh or frozen) 

Kosher salt and freshly ground black pepper, to taste Red lettuce leaves (optional) Soy sauce (optional), to taste Sesame oil (optional), to taste


Directions: 

1. In a bowl, combine the ground meat with all the vegetables and spices listed below. Mix well until all ingredients are evenly distributed in the meat mixture and form meatballs with a 1-inch diameter. 

2. Prepare an electric skillet to cook the dish by heating up until it reaches 130 degrees Celsius (or 265 degrees Fahrenheit). 

3. Add in a few teaspoons of oil and cook the meatballs until they are brown on all sides.  

4. Remove the cooked meatballs and set them aside for later use. 

5. Add more oil (4 teaspoons) to the skillet and sautee garlic, ginger, white onion, green onions, bean sprouts, carrots, and mushrooms for 2-3 minutes or until well-cooked. 

6. Add in the marinated ground meat mixture and stir fry again until well-distributed in the ingredients of the skillet 

7. Pour in water to cover half of your skillet 

8. Place in your noodles 

9. Cover with a lid and turn on your heat to medium so it will cook faster 

10. Cook for 3-5 minutes or until the noodles have softened slightly

11. Meanwhile, in another bowl, combine the vinegar, soy sauce, and corn starch. Mix well to form a thick paste of soybean paste then set aside for later use. 

12. Add in some hot peppers such as jalapenos and chili garlic chilies along with fish sauce to taste, stir well, and set aside for later use 

13. When the water has boiled down completely and the noodles are soft to touch, add in your fried meatballs along with some  of the sauce mixture that you prepared earlier to coat the meatballs entirely with sauce
