Quite possibly the easiest and most delicious recipe this side of the Mediterranean, these saucy stuffed mushrooms fit snugly into almost any time slot. Perfect for a weeknight dinner or a lazy Sunday afternoon, they are sure to be a hit with your family and friends! This recipe is vegetarian-friendly, gluten-free, dairy-free, and can easily be made vegan as well.
Ingredients
4 medium cloves garlic, minced
2 green onions, finely chopped
1 red bell pepper, minced
3 tablespoons low sodium vegetable broth
1 teaspoon dried oregano
1/2 teaspoon dried rosemary
1/4 cup fresh basil, chopped (or 1 tablespoon dried basil) duck or chicken stock for cooking the mushrooms
8 large portobellos
4 tablespoons extra virgin olive oil
16 ounces fresh spinach, washed and stemmed
4 ounces goat cheese (optional)
Salt and pepper to taste
Instructions
Preheat the oven to 350 degrees Fahrenheit. Wash and pat dry the mushrooms.
Remove the stems. Combine the minced garlic, red pepper, green onions, vegetable broth, oregano, and rosemary in a large bowl. Set aside.
Take each mushroom and spoon 1 tablespoon of the garlic-onion mixture into the bellies of each one. It's okay if it spills out over the sides a little bit because it gets mixed up with all of the other ingredients anyway.
Drizzle about 1 teaspoon of olive oil over each mushroom cap and then sprinkle with salt and pepper to taste (about 1/2 teaspoon each).
Place on a baking sheet and bake uncovered for 20-25 minutes or until soft. The cooking time will vary depending on your oven, but start checking them at 15 minutes.
While the mushrooms are cooking, heat up a little drizzle of olive oil in a skillet over medium heat. Add the spinach and cook for about 1-2 minutes, stirring only occasionally.
Once the spinach is wilted and has turned bright green, remove it from the skillet and set it aside. To serve, divide the mushroom caps between four serving bowls, spooning each with some of the garlic-onion mixtures along with some of the spinach. Top each mushroom cap with goat cheese as well if desired.
