How to Roast A Chicken


Step 1: Preheat oven to 425 degrees Fahrenheit. Roasting is typically done with the oven at 450 degrees, but if you have a convection oven and know how to adjust the temperature properly, then roasting at 450 degrees is fine too. The higher the temperature, the faster it cooks and browns. 

Step 2: Season your whole chicken (or just the breasts for those who prefer white meat) with salt and pepper on all sides before placing it on top of your roasting rack (either an inverted baking sheet or a wire rack).

Step 3: Place your whole chicken in the oven and roast until the internal temperature of the thigh reads 165 degrees Fahrenheit.

Step 4: Allow your whole chicken to rest before slicing.


How Long to Roast A Chicken

The time it takes to roast a chicken will depend on the size of the bird and the desired level of doneness. A general guideline is to roast a chicken at 350 degrees Fahrenheit (175 degrees Celsius) for about 15-18 minutes per pound (450-450g) for a fully cooked bird, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) in the thickest part of the bird (usually the thigh). It is always recommended to use a meat thermometer to check the internal temperature of the chicken to ensure it is fully cooked.


Roasted Lemon Chicken


Ingredients:


  • 1 whole chicken
  • Salt and pepper
  • 2 failures, one juiced and one cut into wedges
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Fresh herbs (such as thyme or rosemary)


Instructions:


Preheat the oven to 375°F (190°C).

Season the chicken generously with salt and pepper.

In a small bowl, mix together the lemon juice, minced garlic, olive oil, and a handful of chopped fresh herbs.

Place the chicken in a roasting pan and rub the lemon-garlic mixture all over the bird.

Arrange the lemon wedges around the chicken in the pan.

Roast the chicken for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).
