Instructions:


In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium heat.

Add the diced onion and red bell pepper to the skillet and sauté until they are tender, for about 3-4 minutes.

Add the frozen mixed vegetables to the skillet and cook for an additional 2-3 minutes until they are heated through.

Add the cooked rice to the skillet and stir well to combine with the vegetables.

In a small bowl, whisk together 3 tablespoons of ketchup, 1 tablespoon of soy sauce, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Give the rice a good toss after adding this mixture.
