The carrot cake, which I discovered when I lived in England, has since been one of my favorite cakes. At each of my English getaways, I need my share of carrot cake for lunch dessert, afternoon tea,

Ingrédients :
  • 3 eggs
  • 175 g flour
  • 1 half teaspoon of salt
  • 340 g caster sugar
  • 100 g Philadelphia cream cheese (or St Môret)
  • 1 sachet of baking powder
  • 1 tablespoon icing sugar
  • 150 g walnuts
  • 200 g carrots
  • 10 cl of neutral oil
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon nutmeg
  • Orange and green almond paste (for decoration, optional)
Preparation :

Preheat the oven to 180 ° c (th 6)
Peel and coarsely chop the carrots (the best in my opinion) or pass them through a blender, like this:

Mix the yeast, flour, salt, and the different spices
Roughly crack the nuts
Beat the 3 eggs and the caster sugar in a bowl
Lather the mixture
Add 2 tablespoons of hot water
Add the oil
In batches, add the flour mixed with the spices, nuts, and carrots
Butter a mold
Pour the mixture into the mold
Bake for 55 minutes (the cake must be dry)
If you want to have a carrot cake on several floors, as in the photo, you just need to bake several carrot cakes, then glaze the upper part, and finally superimpose them. Do not forget to glaze the outside so that the effect is perfect!

Carrot cake frosting recipe:

Whip cream cheese with icing sugar
Line the top of the carrot cake with the frosting (take care that the carrot cake is no longer hot)
The carrot cake is a real delight that you can make for yourself or your children (to show them that they love vegetables, na!). If you want to make your carrot cake a little nicer, you can, like in the US, put a small carrot in almond paste on top:
