Ingredients

1/4 cup olive oil

1 yellow onion diced

2 stalks celery diced

2 cloves garlic minced

2 teaspoons genuine salt

1/2 teaspoon coarse ground dark pepper

1 huge potato stripped and diced

2 carrots cut

1 cup of corn

1 cup peas

1 cup green beans cleaved

2 vine tomatoes diced

4 cups chicken stock

2 cups V-8 juice

Instructions

In a huge stockpot include the olive oil over medium warmth and sauté the onions, celery, and garlic for 4-5 minutes until translucent before including the remainder of the fixings and heating to the point of boiling, at that point diminishing to a stew for 30 minutes.
