Chicken Tortilla Soup Recipe

INGREDIENTS
 2 tbsp olive oil
 1 small onion
 2 garlic cloves
 2 tsp ground cumin
 1 tsp chili powder
 1/2 tsp dried oregano
 1/8 tsp black pepper
 one 15 oz can of corn — drained
 one 15 oz can of black beans — drained
 1 15 oz can of diced tomatoes — tomatoes with chilis is fine
 1 tbsp tomato paste — optional
 4 cups chicken stock
 2 cups shredded chicken — homemade or store-bought
 salt to taste
For serving (optional):
 tortilla chips
 sour cream
 cilantro
 lime
 avocado

INSTRUCTIONS
Heat olive oil in a pot. Add onion and garlic and cook for 2 minutes.
Next, add the spices.
Add in corn, black beans, diced tomatoes, tomato paste (optional), stock and chicken. Cook for 10-15 minutes.
Season with more salt to taste.
