Ingredients:
- 1 lb boneless, skinless chicken breast or thighs, diced
- 4 cups chicken broth
- 4 cups water
- 1 medium onion, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- Salt and pepper to taste
- 8 oz egg noodles
- 2 tbsp chopped fresh parsley (optional)
Instructions:
In a large pot, bring chicken, broth, water, onion, carrots, celery, garlic, thyme, salt, and pepper to a boil over medium-high heat.
Reduce heat to medium-low and simmer for 20-25 minutes, or until chicken is cooked through.
Remove the chicken from the pot and shred it into bite-sized pieces using two forks.
Add egg noodles to the pot and cook until al dente, about 8-10 minutes.
Return shredded chicken to the pot and stir in parsley, if using.
