Mushroom Chicken and Creamy Spinach is a flavorful and satisfying dish made with boneless, skinless chicken breasts, sliced mushrooms, and fresh spinach in a creamy sauce. The chicken is first seared in a pan until browned and cooked through, then set aside. The mushrooms and garlic are sautéed until tender, then combined with heavy cream and spinach to create a rich and delicious sauce. The chicken is then returned to the pan and coated in the sauce before being finished with grated Parmesan cheese. Serve this dish hot for a comforting meal that is easy to prepare.
Ingredients:
- 4 boneless, skinless chicken breasts
- 8 oz mushrooms, sliced
- 1 cup heavy cream
- 2 cups fresh spinach
- 1 tsp minced garlic
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1/4 cup grated Parmesan cheese
Instructions:
Heat 1 tbsp olive oil in a large pan over medium heat. Season chicken with salt and pepper, then add to the pan. Cook for 6-8 minutes on each side, or until browned and cooked through. Remove from pan and set aside.
Add another tablespoon of oil to the pan, then add the mushrooms and garlic. Cook for 2-3 minutes, or until the mushrooms are tender.
Stir in the heavy cream and spinach, then cook until the spinach is wilted and the sauce is thickened about 5 minutes.
Return the chicken to the pan, spooning the mushroom and spinach sauce over each piece.
Sprinkle with grated Parmesan cheese and serve immediately.
