Slow Cooker Chicken and Dumplings




Ingredients:

  • 4 boneless chicken breasts
  • 4 carrots, peeled and diced
  • 2 onions, chopped
  • 4 stalks of celery, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons unsalted butter, melted
  • 3/4 cup milk


Instructions:

In a slow cooker, place the chicken, carrots, onions, celery, garlic, chicken broth, thyme, rosemary, salt, and pepper.
Cover and cook on low for 6 hours.
In a medium bowl, mix the flour, baking powder, and salt.
Stir in the melted butter and milk to form a soft dough.
Drop spoonfuls of the dough into the slow cooker.
Cover and cook on high for an additional 30 minutes, or until the dumplings are cooked through.
