Ingredients:

  • 5 tbsp plain Greek yogurt
  • ⅛ medium cucumber, peeled & grated
  • 1 garlic clove pressed
  • 1½ tsp olive oil
  • 12 hard-cooked eggs, peeled & diced
  • 1 cup diced celery
  • salt and pepper, to taste

Instructions:

Squeeze the water from the grated cucumber with your hands or paper towels.
Combine the Greek yogurt, grated and squeezed cucumber, garlic, olive oil, chopped hard-boiled eggs, celery, salt, and pepper.
Refrigerate for at least 2 hours to allow the flavors to develop. Stir again before serving. Garnish with fresh dill if desired.
