INGREDIENTS
4 boneless skinless chicken breasts
2 tablespoons olive oil
4 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon cumin
juice and zest of 2 limes
1/4 cup cilantro, chopped
INSTRUCTIONS
Whisk together the olive oil, garlic, cumin, salt, pepper, zest and juice of 1 lime, and 1/2 of the cilantro in a bowl. Place the chicken in the bowl, and turn/toss to coat. Marinate in the fridge for 30 minutes.
Preheat oven to 400 degrees. Place the chicken into an oven-safe pan or casserole dish, and pour the marinade over the chicken. Bake the chicken for 30 to 35 minutes or until the internal temperature reaches 165 degrees. Remove from the oven, and top with remaining zest, juice, and cilantro. Serve over rice.
