Ingredients
for 4 persons
1 free-range chicken about 1 kg 600
6 organic oranges
10 cl instant veal stock
2 tablespoons of olive oil
5 cl of balsamic vinegar
2 tablespoons of orange liqueur
2 teaspoons of cumin seeds
1 teaspoon of juniper berries
salt, freshly ground pepper
PREPARATION
1 Preheat the oven to 6/7 (200 °). Cut an orange in four and slide it into the chicken with a little crushed juniper, a little cumin, salt, and pepper. Coat the chicken with oil and season with salt and pepper. Sprinkle with cumin.
2Place the chicken ON A COOK in a dish. Add 2 oranges, one cut into quarters, the other into slices. Place in the middle of the oven for 15 minutes. Turn the chicken OVER THE OTHER COOK and cook for 15 minutes.
3Heat the liqueur and balsamic vinegar to make a kind of caramel. Add the juice of the last three oranges and then the juniper berries. Boil and complete with the veal stock. Turn the chicken on its back so that it is flat and sprinkle it with the preparation. Leave to cook for another 30 minutes. Baste very regularly. To check the cooking, plant the blade of a knife between the thigh and the joint. The juice which flows out must be clear, if it is still pink, it is because the chicken is not cooked.
4Let it rests in the dish for 10 minutes. Cut the chicken into pieces. Serve with the sauce and potatoes.
