This is a recipe that I often make for romantic meals, but it is also very easy to make if there are more of us. The only difficulty may be to find Miso paste. Miso is a Japanese food: It is fermented soybean paste (there is also miso made from rice or barley), very salty. There are brown and white, and probably other colors, but it is the only one I have encountered so far. I most often use white, which is lighter in taste. To buy some, go to an Asian grocery store, or ideally a Japanese one. I've already found some in my organic grocery store as well (very dark rice miso), but it's not really typical, and the taste has nothing to do with it. Once opened, it can be kept for several months in the fridge, in an airtight container. So if you find some, don't hesitate! You will be able to prepare yourself some miso soups!
INGREDIENTS
For 2 persons :
Salmon steaks: 2 beautiful (about 350 g)
Miso paste: 2 c.s.
Honey: 1 large c.c.
Japanese soy sauce: 3 tbsp.
Black and white sesame seeds.
To accompany :
Fresh spinach, or rice. Or both.
Sesame oil
Preheat the furnace to 185°C.
PREPARATIONS
Come on, let's prepare the sauce: In a bowl, put the miso paste.
Add the honey and then the soy sauce. Mix well. Put your salmon steaks in a baking dish and spread the sauce on them,
Then sprinkle them with sesame seeds. Bake for about 20 minutes.
During this time, you can prepare the accompaniment. Wash the spinach, then put it in a frying pan with a little olive oil and reduce it for about 15 minutes. At the end of cooking, add soy sauce and sesame seeds, and the salmon is cooked! We're going to proceed to the dressing. Put spinach on the plates, and sprinkle with a few drops of sesame oil. Put the salmon on top.
