Roasted Carrots and Parsnips


Ingredients

1 lb parsnips, peeled and cut into 1-inch pieces

1 lb carrots, peeled and cut into 1-inch pieces

1 cup onions, cut into wedges

2 tbsp. tablespoon vegetable oil

1 C. 1/2 teaspoon dried thyme

2 tbsp. maple syrup

1 C. Dijon mustard

Preparation

Preheat the oven to 200 ° C. Place parsnips, carrots, onions, oil, and thyme in a baking dish; turn vegetables so that they are evenly coated with oil. Roast in the oven for about 30 minutes.

Meanwhile, combine maple syrup and mustard in a small bowl. Pour over the vegetables, stirring to coat them well with the preparation.

Continue baking for 20 to 25 minutes or until the vegetables are tender and golden, stirring once during cooking.
