These shrimp cocktails are a sensation when served in a martini glass. This is a lower sodium version of the classic recipe. They can also be enjoyed without alcohol, so kids will enjoy serving them!
Ingredients
¼ cup olive oil
3 tbsp. tablespoon white vinegar
1 French shallot, minced
2 tbsp. fresh or dehydrated oregano
1 C. fresh lemon juice
1 C. lemon zest
1 garlic clove, minced
½ tsp. salt
454 g thawed cooked shrimp
1 cup of cherry tomatoes
Preparation
In a small bowl, combine the olive oil, white vinegar, minced French shallot, oregano, fresh lemon juice, lemon zest, minced garlic, and salt.
In a medium bowl, pour the contents of the package of thawed cooked shrimp (without removing the stems) and the halved cherry tomatoes. Toss gently with the dressing, and refrigerate for two to four hours, stirring the mixture occasionally.
Place spoonfuls of the mixture in martini glasses. Garnish each with a shrimp straddling the rim of the glass. Serve with a small fork.
