Beer and Honey Grilled Chicken with Barley and Lentil Salad



Ingredients
1.2 kg 2.5 lb (2.5 lb) Quebec chicken thighs bone-in, skinless
900 ml (4 cups) chicken broth, lightly salted
60 ml (¼ cup) cider vinegar
250 ml (1 cup) beer
45 ml (3 tbsp.) Honey
45 ml (3 tbsp.) Dijon mustard
2 garlic cloves, finely chopped
60 ml (¼ cup) parsley, finely chopped
5 ml (1 teaspoon) freshly ground black pepper
2.5 ml (½ teaspoon) salt
125 ml (½ cup) deglazed barley, dry
125 ml (½ cup) green lentils, dry
250 ml (1 cup) onion, chopped
500 ml (2 cups) zucchini
1 cup (250 ml) carrots, grated
60 ml (¼ cup) sunflower seeds, dry and shelled
6 sprigs of fresh dill (optional garnish)
VINAIGRETTE

30 ml (2 tbsp.) Cider vinegar
15 ml (1 tbsp.) Canola oil
60 ml (¼ cup) fresh dill, finely chopped
5 ml (1 teaspoon) freshly ground black pepper
Preparations
To make the marinade, combine the vinegar, beer, honey, Dijon mustard, garlic, parsley, black pepper, and salt in a jar with a lid. Shake and pour over chicken pieces in a zippered plastic bag. Seal the bag well and stir to distribute the marinade. Keep in the refrigerator for an hour or two, or preferably, overnight.
Bring the chicken broth to a boil. Add the barley and lentils. Cover and cook these ingredients for 20 minutes, according to directions. Do not overcook as they will become mushy. Drain and set aside to cool.
Chop the onion, zucchini, carrots, and garlic and place in a large bowl. Add the barley and lentils as well as the dressing ingredients: apple cider vinegar, canola oil, black pepper, and dill. Sprinkle the sunflower seeds on top.
Grill the chicken thighs over medium-high heat for 10 minutes per side or until the internal temperature reaches 74 ° C (165 ° F). Drizzle with the marinade while cooking.
To serve, place the chicken in the center of a serving platter. Spread the barley and lentil salad around the chicken and garnish with the dill sprigs (optional). Or you can also prepare individual plates in the same way.
