Prawn Mango Curry makes a sweet and delicious sauce. You can make it even sweeter by adding slices of green banana just lemony at the time of serving or, on the contrary, spice it up by adding a few pinches of chili or strong curry.
Ingredients
For 2 people
300 g peeled pink prawns
salt pepper
1 mango
1 tablespoon of olive oil
1 onion
1 teaspoon of curry powder (or more depending on taste)
1 tablespoon chopped parsley
1/2 teaspoon ground ginger
1 pinch of chili powder
15 to 20 cl of liquid cream
PREPARATION
1Peel and mince the onion very finely. Peel the mango, cut it into slices or cubes.
2In a sauté pan, heat the olive oil, brown the onion in it, then add the mango slices and the shrimp. Leave to brown for a few minutes over medium heat.
3Sprinkle with the curry, powdered ginger, chili, salt, and pepper. Drizzle with the liquid cream. Cook over low heat for about 10 minutes. Taste, adjust the seasoning if necessary. Sprinkle with the chopped parsley.
To finish
Serve hot without delay on plates kept warm. Accompany or not with rice, quinoa according to your preferences.
